Short Ribs🥩

Short Rib Ingredients:
➼ 4-5 short ribs
➼ Flour
➼ Pinch of salt
➼ Pinch of pepper
➼ Avocado oil
➼ 3-4 stalks of celery chopped 3″ sticks
➼ 3-4 carrots chopped into 3″ sticks
➼ 1 onion cut into fourths
➼ 1 garlic head with the root cut off (use this for your mashed potatoes later
➼ 6 cups of beef broth/stock or beef bullion cube with 6 cups water
➼ 1/2 bottle of red wine
➼ Italian seasoning or an herb bundle (sprig of rosemary and thyme)

Mashed Potatoes Ingredients:
➼ 5-6 potatoes, peeled
➼ 1 block of cream cheese
➼ 1 cup milk
➼ 1/2 stick of butter
➼ 2 tablespoons Italian seasoning
➼ Salt and pepper to taste
➼ garlic head from short rib stock

Directions:
1. Season short ribs with salt, pepper, and coat in flour
2. Put avocado oil in the pot and sear short ribs
3. Remove from pot/Dutch oven. Do not clean out the pot. Leave the flavor!
4. Cut up celery and carrots into 3″ sticks put in the pot/Dutch oven
5. Cut up the onion into fourth and put in the pot/Dutch oven
6. Cut off the bottom of the garlic head and put in the pot/Dutch oven
7. Pour in 1/2 a bottle of red wine. It doesn’t matter the wine. Just buy whatever you like. I’ll do the 2 buck chuck from Trader Joe’s.
8. Pour in 6 cups of beef stock
9. Put short ribs back in the pot and make sure they are barely covered with the stock and red wine
10. Place in oven for 350 for 3 hours
11. Peel and cut mashed potatoes, boil them, and put them in your stand mixer
12. Add in cream cheese, butter, salt and pepper, Italian seasoning
13. When the short ribs are done, remove the head of garlic and squeeze it into your mashed potatoes and mix
14. Remove carrots, onions, celery, garlic head and short ribs leaving just the liquid
15. Add in 1/2 cup of flour and then whisk on low/medium heat. Add in more flour gradually until it thickens into a gravy
16. Add short ribs back into gravy
17. Take the head of garlic and squeeze it into your mashed potatoes and mix
18. Plate by adding mashed potatoes, short ribs, and gravy
19. Enjoy!
